The New Year finds us in different conditions compared to previous years. In a home environment, with restrictions on movement, with the restaurant closed and of course without the possibility to have a New Year’s Eve or tο enjoy the first breakfast in our favorite restaurant or hotel.For this reason we have prepared 3 easy New Year’s brunch recipes for the whole family, which will make the situation tastier and will be a new luscious addition to our favorite morning habits.
Avocado Toast with marinated cherry tomatoes and herbs
Ingredients
- 2 slices of multigrain bread
- 1 ripe avocado
- 6 cherry tomatoes cut in slices
- 1 tablespoon of strained yoghurt (optional)
- Lime juice
- Salt and pepper
- Thyme and oregano
- 1 tablespoon of olive oil
Cooking Instructions
Sprinkle the bread with olive oil and toast it.
Peel the avocado and cut it in big pieces. We put it in a multi along with the yoghurt, lime-juice, olive oil, salt and pepper.
Mix the sliced cherry tomatoes in a bowl with a little olive oil, salt, pepper and herbs.
Spread the avocado mousse on the bread, afterwards the cherry tomatoes and garnish with olive oil, herbs and if we wish a few rucola leaves.
Strapatsada eggs with fresh tomato, feta cheese and basil
Ingredients
- 3 eggs
- 1 large tomato sliced in cubes (without the seeds and skin)
- 30 gr of feta cheese
- 1 teaspoon of olive oil
- Fresh herbs(oregano, basil, thyme)
- Salt and pepper
Cooking Instructions
In a saucepan or a frying pan heat up olive oil and add the tomato.
Saute until liquids are gone.
Add the eggs, lower the heat and stir constantly until they start to cook.
Remove from fire while they are still juicy, add feta cheese either grated or sliced by hand.
Add herbs, salt and pepper.
Serve on toasted bread, garnish with fresh basil, olive oil and freshly ground pepper.
Tasting Tips
If we want it to come out fluffier, we can add a little butter, after we have removed it from the fire.
We can try variations with the cheese of our preference (cream-cheese, manouri, gruyere etc)
Toasted sandwich with peanut-butter, banana and honey
Ingredients
- 2 slices of toast bread (prefer thick slices)
- 2 teaspoons of peanutbutter
- 1 banana sliced
- 1 sachet of brown sugar
- 1 teaspoon of honey
- Melted butter (optional)
- Cinnamon for garnish
Execution
Heat up the oven in 180 degrees.
Spread the toast bread on one side with butter. Fill the sandwich with the peanutbutter, banana slices and close.
Sprinkle with brown sugar on top slice and bake in a pan for about 10 minutes until is crispy and the sugar caramelized.
Garnish with honey and cinnamon powder.

Tips & Garnishes
It is better to bake the sandwiches on non-stick paper, to avoid any sticking and also to keep the pan clean.
We can replace the peanut butter with hazelnut praline and instead of honey and cinnamon garnish with chocolate syrup and fruit.
