Nikolou winery introduces Savatiano Fine Lees 2019 PGΙ Attica. Embrace the variety’s formality and the prevailing magic of the Mediterranean land.
The Attica vineyard with a history of 4000 years continuous viticulture is the homeland of the white variety Savatiano.
Indigenous variety showing resistance to arid climate of Attica and which in the past has given us excellent quality wines such as CAVA CAMPAS or CHATEAU MATSA but unfortunately large quantities of “indifferent” wines of mass production – mainly in a version of resin – which finally made the public turn their backs on it.
In the last fifteen years, however, Savatiano has returned dynamically in the foreground passing into the hands of young winemakers.
They made the most of its potential variety, using know-how and sophisticated equipment as a result of which today we have in our glasses a great deal of premium wines we will never forget.

ORIGIN & IDENTITY
Vassilis Nikolou, Professor of Oenology at the University of West Attica continues the family tradition having with exceptionally interesting labels on his record such as the famous “Yellow”, an organic Savatiano without sulfites but also “Botanic” sparkling, a sparkling dry wine from Savatiano vinified with the traditional method (methode traditionnelle) i.e with the second fermentation in the bottle.
The premium Savatiano team is completed by Fine Lees as evidenced by its brand name (Fine Lees =fine wine lees), a Savatiano that after its end fermentation and before bottling is left for 12 months with its fine wine lees.

WINE DESCRIPTION
Light gold color with green layered highlights.
Aromatically complex on the nose with orange peels, nectarine and ripe yellow fruits in the foreground.
Notes of dried flowers together with brioche complement harmoniously.
Mouth full of oily texture, lively acidity and sweet yellow fruits featuring a discreet botanical nature setting the tone of a particularly well-made wine.
Aftertaste long in duration and intensity.
HARMONY WITH FOOD
Purely gastronomic wine that thanks to its structure “looks in the eye” most dishes of Mediterranean cuisine.
Start with creamy potato soup with crispy apaki and chives.
Enjoy it with grilled or pan-fried fish but also with sardines in the oven with lemon and ginger.
In addition, combine it with white meat such as chicken with okra, pork with celery but also dishes with toned lemon acidity like cabbage stuffed with egg and lemon sauce.
Rabbit with oregano in the oven with potatoes, zucchini and orange juice will take on another dimension.
I highly recommend to savor it with the excellent recipe of the Chef Konstantinos Koveos, chickpeas with spinach, fennel and lemon.
