On 01/10/22, Varoulko, welcomes Gerasimos Thymnios, former Maitre of the iconic Salonica Restaurant and partner of Executive Chef Sotiris Evangelou at Makedonia Palace as the new restaurant’s manager.

Born and raised in Serbia, Kozani, with a brilliant career in award-winning hotels in the wider area of Milan and Parma (Italy), with studies at the international school of Italian cuisine ALMA (Alma Srl Scuola Internazionale Di Cucina Italiana) and specialization in F&B Management, Gerasimos Thymnios carries in his luggage a thesaurus of tastes and experiences of international culture.
Who is Who
I was born and raised in Serbia, Kozani. With the constant support and love of my family, I was able to pursue my educational goals helping me to advance my professional career.
I first embarked on the journey of hospitality and catering at the age of 17 as a waiter. Driven by my inner desire for evolution and professional recognition led me to study at the School of Tourism Professions at OTEK in Thrace. I worked as an intern at Makedonia Palace and Grecotel Amirandes.
My educational paths guided me In Parma(Italy) where I graduated from ALMA(La Scuola Internazionale Di Cucina Italiana) with F & B management as a subject of study.
I have also completed 2 levels of Oenology at the Associazione Italiana Sommelier in Parma and have successfully completed all 3 levels of the WSPC (WSET).
Professional recognition came shortly after working in award-winning hotels in the greater area of Milan and Parma, when I assumed the position of Maitre d’Hotel at Makedonia Palace in Thessaloniki.
The collaboration with Varoulko will breathe new life, combining its successful course with the hotel and restaurant experience of Gerasimos Thymnios, expecting to continue its upward trajectory in the country’s wine and food events.
