LoLa is a rose retsina 2018, whose famous name and bold vinification by Aoton Winery reveals the character in the Mesogia land of Attica.
The pleasant wine surprise of this summer is called LoLa like the title of the song of The Kinks that is hard to forget no matter how many years have passed.

Origin & Identity
The producer Sotiris Gkinis from Peania brought to our glasses all his art and imagination in an original and bold vinification creating a rose dry resin from the varieties Mandilaria 74% and Cabernet Sauvignon 26%.
Its privately owned and organic vineyards of Aoton Winery in the heart of the historic wine-producing region of Mesogia give the exceptional raw material and the night harvest helps to maintain the freshness of the grapes until the door of the winery.
During the controlled alcoholic fermentation , pure resin from the pine-forest of Kouvara is added, while after the end, the fresh wine remains in the tank for 8 months with its fine lees and periodic batonnage, gaining in texture and complexity.
LoLa is bottled in a beautiful Alsace type bottle while its label is a real work of art.
Wine Description
Dark pomegranate color.
On the nose complex with aromas of fresh and dried red fruits, while mastic and pine nuts together with hints of mahlab and rosemary harmoniously complete the whole.
The medium volume of the mouth is dry with moderate plus acidity and mild tannins while the nose aromas are harmoniously framed by the resin, contributing to the creation of a crisp and cool profile.
What is impressive here, however, is the masterful way of integrating the resin into the whole, which not only does not tire, but comfortably supports every «demanding» dish of Greek gastronomy.
Medium lasting elegant aftertaste that is always present even after bites of intense taste.
Harmony with Food
Pure gastronomic wine, LoLa is an ideal companion for “demanding” dishes such as grilled mushrooms with garlic and coriander or a delicious pork “tigania”, a recipe made with small pieces of pork, vegetables and herbs in a frying pan.
Try it also with grilled salmon with horseradish sauce and baked grouper in the oven. Veal with spicy Satay sauce and grilled lamb (an authentic Mediterranean specialty) will take on another dimension.
An exceptional recipe by Chef Konstantinos Koveos that would suit is the pork with forest fruit sauce and red wine. It is understood here that the place of red wine in the recipe will be taken by LoLa.
Enjoy it in a glass without food to be accompanied.
It is an excellent case study for anyone, who wants to delve into the modern version of resin that has nothing to do with the mediocrity of the past.
