Champagne (French term champagne) is a fine sparkling wine originating from the Campania region. The first sparkling champagne was created in France by mistake. The pressure on the bottle gave it the name “devil’s wine” (le Vin du Diable) as the bottles exploded and the corks burst. At that time, bubbles were considered a fault.
The monarchy of the 17th, 18th and 19th centuries associated it with luxury and nobility. It is a symbol of status with unsurpassed style and dazzling shine. It is deservedly described as the absolute star of successful social events.
Most quality sparkling wines are the result of two fermentations. One to turn grape juice into wine without bubbles (base wine) and a subsequent one to turn base wine into sparkling wine.
The winemaker stimulates the second fermentation by adding yeast and sugar to the base wine. The additional wine yeasts, convert the sugar into alcohol and carbon dioxide into bubbles.
Sparkling wines are divided into 2 categories depending on their fermentation: the traditional method (Classic Method – Fermentation takes place in bottles) and the sealed tank method (Cuve Close – The second fermentation takes place in large sealed tanks).

The varietal composition of the Sparkling Paranga label is Xinomavro, Moscato and Chardonnay with the possibility of 2-3 years of aging.
