But all the recipes have one ingredient in common: a primitive material of which we all have the most favorite memories and stories to narrate. The flour… Loaves leavened with love, pies with plain ingredients, cakes, dumplings… kneading, rising, energy, love and, the greatest of them all, know-how!
Meet the author
Chef Dina Nikolaou’s culinary restlessness began at a very young age. Nevertheless, a trip to Paris for a post-graduate degree in economics was the motive to bespeak her destiny. She got started on with studies in professional culinary arts at the culinary school of Paris “Le Cordon Bleu“, “Ritz Escoffier”, “Alain Ducasse formation“, “Lenôtre“.
Beloved, popular, multi-awarded, with a passion for Greek culinary culture and Greek products, she aspires to highlight Greece as the ultimate culinary destination, making widely known the nutritional value and superiority of the Greek Mediterranean diet throughout the world.
Her restaurant in Paris (Evi Evane) which she has created with her sister Maria, as well as the 5 traiteurs, who have joined the family business, is synonymous with Greek and Mediterranean food for Parisians that “wanders” them through the flavors of all parts of Greece. This continuous effort was recognized by Gilles Pudlowski, creator of the French gastronomy guide Pudlo Paris, who in 2017 raised Evi Evane to the first step of the podium, handing it on with the great distinction of “The best foreign cuisine restaurant in Paris”.
Quite active at the Greek gastronomy scene as well, where from 2011 until at present, Chef Dina Nikolaou remains a Cheffe Ambassador for the gastronomic promotion of the Pre-Athos region and a local gastronomic destination advisor at the Halkidiki Mount Athos Area Kouzina gastronomy festival, while since 2013, she has been an honorary member and supporter of traditional local cooking at the Cretan Cuisine Festival. In 2020, Chef Dina Nikolaou takes on the role of Food Ambassador at the program “informative and promotional activities aimed at highlighting the sustainable aspect of rice production in Greece and Spain”.
For all these pursuits, Chef Dina Nikolaou has received several awards. In 2017 at Tourism Awards received the highest prize and was awarded with the Golden Award for Greek Cuisine, in 2019, during the Food Expo Athens, was named Ambassador of Greek Cuisine in abroad acknowledging a consecutive 15 year contribution for the international promotion of Greek products, in 2021 the Greek International Women Awards (GIWA) awarded her support at Tourism and Hospitality category, but also in 2023 the former Minister of Finance Christos Staikouras awarded her for the input to the country’s development and Greek gastronomy ´s worldwide propulsion.
